Wood Fired Marinated Lamb Chops
Succulent lamb chops marinated in a vibrant yogurt-based green sauce, wood-fired for a perfect char and served with a zesty pickled onion salad.
Ingredients
- •pieces onion (chopped)
- •cloves garlic
- •piece ginger
- •pieces green chili (chopped)
- •pinch salt
- •tsp ground cumin
- •tsp garam masala
- •bunch coriander
- •cups greek yogurt
- •1 rack rack of lamb (cut into chops)
- •bunch spring onion (chopped)
- •bunch parsley
- •drizzle lime juice
- •drizzle olive oil
- •pinch pepper
- •drizzle honey
Method
- 1Blitz onion, garlic, ginger, green chili, salt, ground cumin, garam masala, and coriander in a food processor to create a green paste.
- 2Mix the green paste with Greek yogurt in a bowl.
- 3Cut the rack of lamb into individual chops, then coat them thoroughly in the yogurt marinade. Refrigerate for 24 hours.
- 4Prepare the dipping sauce by blending spring onion, garlic, coriander, parsley, green chili, lime juice, olive oil, salt, and pepper.
- 5Season the marinated lamb chops with salt and a drizzle of olive oil, then cook in a hot wood-fired oven until charred.
- 6Prepare the onion salad by slicing onions and tossing them with lime juice, salt, honey, and olive oil.
