Monkfish Skewers with Cucumber Salad

Ingredients

  • monkfish (cut into chunks)
  • pinch chili flakes
  • to taste black pepper
  • from 1 lemon lemon zest (grated)
  • cloves garlic (grated)
  • drizzle extra virgin olive oil
  • red onion (sliced)
  • green pepper (chopped)
  • 1 whole cucumber (thinly sliced)
  • pinch salt
  • splash vinegar
  • bunch dill (chopped)

Method

  1. 1In a bowl, combine monkfish chunks with chili flakes, black pepper, lemon zest, grated garlic, and a drizzle of extra virgin olive oil. Mix well to coat.
  2. 2Thread the marinated monkfish onto skewers, alternating with pieces of red onion and green pepper.
  3. 3Grill the skewers over hot coals until the fish is cooked through and has a nice color.
  4. 4Prepare the salad by combining sliced cucumber, salt, black pepper, and a splash of vinegar in a bowl. Smash the mixture slightly, then stir in chopped fresh dill.
  5. 5Serve the grilled skewers over the cucumber and dill salad, drizzling any remaining marinade from the pan over the top.
