Monkfish Skewers with Cucumber Salad
A quick and flavorful dish featuring firm monkfish skewers grilled with onion and pepper, served alongside a refreshing cucumber and dill salad.
Ingredients
- •monkfish (cut into chunks)
- •pinch chili flakes
- •to taste black pepper
- •from 1 lemon lemon zest (grated)
- •cloves garlic (grated)
- •drizzle extra virgin olive oil
- •red onion (sliced)
- •green pepper (chopped)
- •1 whole cucumber (thinly sliced)
- •pinch salt
- •splash vinegar
- •bunch dill (chopped)
Method
- 1In a bowl, combine monkfish chunks with chili flakes, black pepper, lemon zest, grated garlic, and a drizzle of extra virgin olive oil. Mix well to coat.
- 2Thread the marinated monkfish onto skewers, alternating with pieces of red onion and green pepper.
- 3Grill the skewers over hot coals until the fish is cooked through and has a nice color.
- 4Prepare the salad by combining sliced cucumber, salt, black pepper, and a splash of vinegar in a bowl. Smash the mixture slightly, then stir in chopped fresh dill.
- 5Serve the grilled skewers over the cucumber and dill salad, drizzling any remaining marinade from the pan over the top.
