- •pieces potatoes (peeled and halved)
- •2 pieces chicken supreme
- •drizzle olive oil
- •2 cloves garlic (smashed)
- •sprig rosemary
- •to taste chicken jus
Method
- 1Prepare the herb butter by blending butter, wild garlic, parsley, lemon zest, and salt in a food processor until smooth and vibrant green.
- 2Peel and halve the potatoes, then boil in salted water until tender.
- 3Sear the chicken supreme in a pan with olive oil over medium-high heat until the skin is golden brown.
- 4Add smashed garlic, rosemary, and a knob of butter to the pan, basting the chicken, then finish cooking in the oven.
- 5Pass the boiled potatoes through a fine-mesh sieve for a smooth texture, then fold in the prepared wild garlic herb butter.
