Strawberry Rhubarb Pie
A classic, sweet and tart strawberry rhubarb pie, perfect for serving with a scoop of vanilla ice cream.
Ingredients
- •stalks forced rhubarb (chopped)
- •cups strawberries (chopped)
- •2 discs pie crust (rolled out)
- •scoops vanilla ice cream
Method
- 1Chop the forced rhubarb and strawberries into small pieces and combine them in a bowl.
- 2Roll out the first disc of pie crust and place it into the pie dish.
- 3Cut the second disc of pie crust into strips to create a lattice top.
- 4Fill the pie crust with the fruit mixture and arrange the lattice strips on top.
- 5Bake the pie until the crust is golden brown and the filling is bubbling.
- 6Serve a slice of the warm pie with a scoop of vanilla ice cream.
