Herbaceous Chicken Sandwich
A healthy and vibrant chicken sandwich layered with hummus, sprouts, sauerkraut, heirloom tomatoes, cucumber, and Boston lettuce, served with a side of pickles, blood orange, and ginger kombucha.
Ingredients
- •2 slices sprouted grain bread (lightly toasted)
- •spread hummus (freshly made)
- •handful alfalfa sprouts
- •1 piece chicken breast (grilled and sliced)
- •small pile sauerkraut
- •2 slices heirloom tomato (sliced)
- •to taste black pepper (cracked)
- •sprinkle salt
- •few cucumber (thinly sliced)
- •2 leaves boston lettuce
- •1 piece dill pickle (sliced in half)
- •handful spicy dill pickle chips
- •slices blood orange (sliced)
- •glass ginger kombucha
Method
- 1Place a sheet of parchment paper on your workspace. Lay down the two slices of toasted sprouted grain bread.
- 2Spread hummus on both slices of bread. Add a layer of alfalfa sprouts on top of the hummus.
- 3Slice the grilled chicken breast and place it on one slice of bread. Top with a pile of sauerkraut.
- 4Add heirloom tomato slices, season with cracked pepper and a sprinkle of salt. Layer with thinly sliced cucumber and Boston lettuce leaves.
- 5Close the sandwich, use the parchment paper to wrap and hold it together, then slice in half.
- 6Serve on a tray with a side of sliced dill pickle, spicy dill pickle chips, blood orange slices, and a glass of ginger kombucha.
