Bay Leaf Ice Cream

Ingredients

  • 1.5 cups whipping cream
  • 1.5 cups whole milk
  • 25 leaves fresh bay leaves (crushed)
  • 150 g sugar
  • dash milk powder
  • pinch salt
  • 2 large egg yolks

Method

  1. 1Combine equal parts cream and milk in a pot. Add crushed bay leaves and heat to a low simmer, then remove from heat and let steep in the fridge overnight.
  2. 2Whisk together sugar, milk powder, and salt in a bowl. Add egg yolks and whisk until combined.
  3. 3Warm the steeped milk mixture slightly. Temper the egg mixture by slowly adding a ladle of warm milk while whisking constantly.
  4. 4Return the tempered mixture to the pot and cook over medium heat, stirring constantly until it reaches 170°F and coats the back of a spoon.
  5. 5Strain the custard into a container and chill completely in the fridge.
  6. 6Pour the chilled base into an ice cream maker and churn until set.
