Bay Leaf Ice Cream
A unique, savory-sweet ice cream infused with fresh bay leaves, similar in profile to corn ice cream.
Ingredients
- •1.5 cups whipping cream
- •1.5 cups whole milk
- •25 leaves fresh bay leaves (crushed)
- •150 g sugar
- •dash milk powder
- •pinch salt
- •2 large egg yolks
Method
- 1Combine equal parts cream and milk in a pot. Add crushed bay leaves and heat to a low simmer, then remove from heat and let steep in the fridge overnight.
- 2Whisk together sugar, milk powder, and salt in a bowl. Add egg yolks and whisk until combined.
- 3Warm the steeped milk mixture slightly. Temper the egg mixture by slowly adding a ladle of warm milk while whisking constantly.
- 4Return the tempered mixture to the pot and cook over medium heat, stirring constantly until it reaches 170°F and coats the back of a spoon.
- 5Strain the custard into a container and chill completely in the fridge.
- 6Pour the chilled base into an ice cream maker and churn until set.
