Slow Roasted Lamb Leg with Mustard, Garlic & Rosemary
A tender, flavorful slow-roasted lamb leg seasoned with mustard, garlic, and fresh rosemary, served over a bed of roasted vegetables.
Ingredients
- •1 whole lamb leg
- •to coat mustard
- •cloves garlic (sliced)
- •sprigs rosemary
- •sliced potatoes (sliced)
- •sliced onion (sliced)
- •chopped carrots (chopped)
- •splash red wine
- •1 wedge lemon (squeezed)
Method
- 1Pat the lamb leg dry with paper towels and make small incisions in the meat.
- 2Rub the lamb with mustard, then insert sliced garlic and rosemary sprigs into the incisions.
- 3Layer sliced potatoes, onions, and chopped carrots in a roasting dish.
- 4Place the seasoned lamb on top of the vegetables, add a splash of red wine, and squeeze lemon juice over the meat.
- 5Roast in the oven at 180°C until tender and cooked through.
