Slow Cooker Satay Chicken
A high-protein, easy-to-make slow cooker meal featuring tender chicken in a rich, creamy peanut satay sauce.
Ingredients
- •1 kg chicken breast (whole)
- •1 unit onion (sliced)
- •2 units carrots (sliced)
- •0.5 cup satay sauce
- •400 ml coconut milk
- •1 tbsp brown sugar
- •1 tbsp apple cider vinegar
- •2 tbsp peanut butter
- •2 cloves garlic (grated)
- •3 units bell peppers (sliced)
Method
- 1Place chicken breasts, sliced onion, and sliced carrots into the slow cooker.
- 2Add the satay sauce, coconut milk, brown sugar, apple cider vinegar, peanut butter, and grated garlic to the slow cooker.
- 3Cover and cook on high for 4 hours.
- 4Shred the chicken using two forks directly in the slow cooker.
- 5Stir in the sliced bell peppers and cook for an additional 15-20 minutes until peppers are tender.
