Lamb Patty Melt with Paprika Onions

- •3 whole yellow onion (sliced)

- •12 oz lamb (formed into patties)
- •4 slices marbled rye bread
- •to taste smoked gouda (grated)
- •to taste dijon mustard
- •to taste cabbage (chopped)
- •0.5 whole cucumber (shredded)
- •to taste sugar
- •to taste fresh dill (chopped)
- •to taste vinegar
- •to taste mayonnaise
Method
- 1Slice onions and caramelize in a pan with olive oil, salt, paprika, chili powder, caraway seed, ground coriander, butter, and black pepper until jammy.
- 2Prepare the slaw by chopping cabbage and shredding the cucumber. Toss with sugar and salt, let sit to expel liquid, then squeeze out excess moisture. Mix with fresh dill, vinegar, and mayonnaise.
- 3Form lamb into two patties slightly larger than the bread slices. Season with salt and pepper.
- 4Heat a cast iron pan. Sear lamb patties until charred. Assemble the melt by placing cheese on bread, adding the patty, caramelized onions, more cheese, and dijon mustard on the top slice.
- 5Butter the pan and toast the assembled patty melts until golden brown and the cheese is melted.
